I've never taken to anything with more than 2 blades. Simple 2 blades is plenty for me. Gillette Sensor or Sensor Excel. Or even a package of disposables although you only get one or two decent shaves out of them.

I am an against-the-grain'er.

how do you do it paul? if i go against the grain (on my mustache, beard is ok), i get a few pimply, razor bump kinda things on each edge of my stache

i don't go against the grain on the stache, too tedious and scary. Maybe you need a new brand of shaving cream. At one point i was using gel, and had a problem with razor burn. Switched back to cream, bam problem solved.

always use sharp razors (i prefer more blades but I can see Das's point to go for less; depends on what you are comfortable with)

preparing skin with hot water or warm wet cloth are crucial to open up the pores so you can get to the hairs deeper

I prefer shaving gel over shaving cream

make sure the hairs you shaved off never get inbetween the blases. Rince often. to me, that's one of the key thing to watch for. Blades full of hairs will cause most irritation imo.

Good aftershave or some male facial cream will help your skin calm down faster, reducing the risk for irritation

Yeah, I always shave right after a shower. Cuts down on the "pulling" of hairs.
