[[Roll offs.]] Unwritten rules?

So I have the understanding the circumstances of a roll off and its purpose, But I would like to know if their where any "unwritten rules" that are usually followed.

During a roll off for a place between two people, do they have to use an 8 stack to roll with? Could they both use 3 stacks, 5 stacks (etc)? But still roll on a land with different dice on it, than the other player?

What Im trying to make clear is, Does the number of dice on a land effect the number by witch you will roll?

I mean, Couldn't you attack a land with one dice on it with an 8 stack, and have attacked an 8 stack with that same roll?

This could make roll offs a bit easier, And make it less complicated by having to wait until both players are up to an 8 stack. I'm not positive if this has already been discussed, But it has recently came to my attention.
